Kim's Lodi Ranch Cab

A friend bought a kit for me to make. I have made it before and it turned out very well so I have high hopes for this batch.

The ingredients:

Everything was started on 2 March (2015). The yeast was strong and noticeably bubbling about 12 hours after pitching which is very healthy.

After 10 days fermentation is almost over. Gravity was 0.994. There is still a little activity so I took the skins out and got the young wine off the yeast cake and oak shavings and moved it to a carboy for the final days of fermentation.

Even though the original fermentation had oak shavings, this kit has additional oak in the form of cubes that are added after fermentation is complete. They stay in the wine for a week or so just before the wine starts its bulk aging.
