I have done mostly Cab's because they are full body full flavour since I started
making wines. Now that I have several batches under my belt I can start to
expand. I bought this Zinfandel kit last fall but haven't had time to make it
until now. This is an eclipse kit like the Lodi Ranch Cab. This one started
fermenting quicker than any other kit I have done. It definitely wants to go! Was a strange spongy gunk floating in this one for some reason. I asked around and it seems that there was an overabundance of co2 in solution when I added the stabilizers and clarifiers so instead of the particulate matter "falling" out of suspension it got caught in and with co2 and rose to the top. There is nothing to worry about. I might degas a little more than normal just to make sure the co2 is gone before I bottle. Bottled the other night and things tasted pretty good. You can tell its not a straight Cab. |
