Australian Cabernet II
Liked this kit so much I did it again. Mainly for the wine, but also to see if
there is any difference experience has. This was my first wine kit, so I learned
a lot since I made this last time. I don't think there will be much difference
in taste but I have learned a lot in the last 9 months. Mainly with process /
procedure. Each batch I make I learn something or wish I did something different
on previous kits. I think the better process will allow the wine to last longer. This kit has three packs of oak for a fuller oak hint. The yeast (premiere cuvee) was added 15 Sep at about 73 degrees. The basement floor will bring the temp down to about 70 before the yeast really take off tomorrow. The OG was 1.090. Cuvee is a strong yeast and should take the gravity down to 0.994 which should bring the ABV to 12.75%. Bottled. Haven't shrunk the caps yet.
