Joes Ancient Orange Mead

 

A very simple recipe of honey with an orange twang. I have never had a mead, but I wanted to try this. Its honey, couple of oranges, and Cinnamon.

The OG was through the roof at 1.150. If it doesn't taste good, I can always run my lawn mower on it

Still fermenting, but as of this writing the SG is down to 1.050 giving a ABV of 13.5% (and it is still going). I used champagne yeast which should go dry. If it makes it to 1.000 the ABV will be 20%. It will have to age quite a while to mellow with the orange. I am in no real hurry. Will be interesting.

I almost threw this batch out because it stopped fermenting at 1.020. It might have been good on pancakes, but not in a glass. I drew a liter off and replaced it with water to dilute it. Fermentation started up again. Still don't have high hopes for this batch, but I will give it a while longer (until I need the carboy).

I was going to throw this out. It was a bad recipe. I added 2 more pounds of honey than a normal high gravity batch. This stuff clocks in at over 21% ABV. I can't believe this stuff kept fermenting for the 5 months I just let it sit. I added a little sweetner / stabilizer so it won't burn through the bottles. I will see how it looks in a month or so. If it clears I will bottle and forget it for a few years. This was supposed to be a simple mead for my first one. The recipe calls for bread yeast which stalls out at about 10% but I went with regular wine yeast to give it a kick. This stuff definitely won't be drinkable for years. I will put it in the farthest depths of my wine cellar.

I bottled today. It was very clear, I was amazed. It didn't taste very good but I will let it sit a while.
