Blackberry Jam wine
The first time I have ever tried Smuckers blackberry jam (on toast) was to taste it for this wine. Turns out I love blackberry jam and have been eating it ever since. I am looking forward to this wine to see how it tastes. Since the yeast convert sugar to alcohol, there might not be as much of the blackberry flavour as I am used to in the jam. The last time I tasted the wine - there was still a nice blackberry flavour to it. I will know when I bottle it. The OG was 1.092 The yeast was added There was a healthy primary fermentation The last I checked the SG was 1.006 giving me 11.4% ABV. It is currently bulk aging. Will probably let it go another month and then rack / fine it and bottle in May. Checked the clarity a few days ago and it was clear (as far as I can tell). I didn't use any fining agents, just time. Been working on label ideas: Cheesy, I know. Bottled today. Might be a little hazy and was actually going to use superKleer, but it was clear enough for a first attempt. Got about 13 bottles and a pint left over out of a three gallon batch. The pint is going down nice. There is a bit of tartness to go along with about 12% ABV. |
